Wellp, the bread still didn't rise. I think the bark has an antiseptic quality that kills off the yeast. The taste improved a bit the amount of bark was cut by a third. May increase it a bit next time. This time I'm going to try skipping the second rising and just shape it to begin with and bake it after the first rising (it seems to rise more the first time anyway). Definitely worked better to make many, smaller, flat breads rather than one big loaf - it actually got done almost all the way through (center still chewy). Probably should leave it another five minutes (25 instead of 20 minutes?). Take 3 should occur later this week...
